Fukucho Seaside sparkling Junmai 13%ABV
Sparkling Sake made through the secondary fermentation within its bottle. Crisp citrus notes of lemon-lime and apple aromas with a soft frothy finish. Female brewer owned.
Tokubetsu Junmai 16.2%ABV
The epitome of the farm-to-table movement, this sake is made only of rice, water and labor from it’s own prefecture. Tasting notes of drying flowers and baking spice give way to savory salinity. Slightly dry and medium-bodied.
Tozai Well of Wisdom Ginjo Sake 14.9%ABV
Well of Wisdom draws its water source from the town of Fushimi, which means “hidden water” and is known for its characteristically soft and pure water that is perfect for brewing sake. Watermelon, honeydew, sweet melon, and a hint of pistachio. Soft and silky with a touch of white pepper on the finish.
Snow aged Junmai Daiginjo 3 years 17%ABVMatured alongside and chilled in the traditional way by a massive amount of snow stored in the same insulated room, known as a “Yukimuro”. From the cold snow alone temperatures are kept naturally stabilized at a balmy 3 degrees Celcius, all this without the use of electricity. This traditional and environmentally-friendly technique adds a smoother, rounder feeling to the already creamy flavor, which is sweetened by hints of pear.
Tozai, Snow Maiden, Junmai Nigori 14.9%ABV
Named after the most famous Japanese koi fish that lived for 226 years in the snowy, icy waters at the foot of Japan’s Mt. Ontake. Bright and fresh with flavors of honeydew melon, raw pumpkin, and radish. Creamy texture and full body.
